  • 1 generous cup chopped peeled apple

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together milk, eggs, maple syrup, applesauce, and vanilla essence.
  3. In another bowl, combine oats, baking powder, cinnamon, nutmeg, and salt.
  4. Mix dry ingredients into wet until just combined; fold in chopped apples.
  5. Spoon mixture into muffin cups about three-quarters full and sprinkle with coarse sugar if desired.
  6. Bake for about 28 minutes until golden brown. Cool before serving.
