  • 1 red bell pepper
  • 1 small cucumber
  • 1 medium carrot
  • 1/4 red onion
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup roasted peanuts, roughly chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons soy sauce (or coconut aminos)
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon sesame oil
  • 12 red chili peppers, finely chopped
  • 1 clove garlic, minced

Instructions

  1. In a small bowl, whisk together lime juice, soy sauce (or coconut aminos), honey (or maple syrup), sesame oil, chili peppers, and minced garlic until well blended.
  2. In a large mixing bowl, combine the julienned mangoes, sliced bell pepper, cucumber, carrot, red onion, cilantro, and mint.
  3. Pour the dressing over the salad mixture and toss gently to coat.
