  • 1 1/2 cups chicken broth
  • 1 cup fresh pineapple chunks
  • 1 cup bell peppers, chopped
  • 3 green onions, chopped (divided)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce
  • 12 tablespoons olive oil or sesame oil
  • 1 tablespoon brown sugar or honey

Instructions

  1. Prep your ingredients by dicing the chicken, chopping bell peppers, and mincing garlic and ginger.
  2. Heat oil in a large skillet over medium-high heat. Sauté garlic and ginger until fragrant, then add chicken pieces, cooking until golden brown (about 5-6 minutes).
  3. Stir in bell peppers and half of the green onions; cook for 2 minutes. Add pineapple chunks to warm them through.
