  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup carrot slices
  • 1 ripe avocado, sliced
  • 34 cherry tomatoes, halved
  • 1 tsp olive oil or butter
  • Salt & freshly cracked black pepper, to taste

Instructions

  1. Heat olive oil or butter in a non-stick skillet over medium-low heat. Crack the egg into the skillet and cook until the whites are set but the yolk remains runny, seasoning with salt and pepper.
