  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 3 large eggs, room temperature
  • 1 box (3 oz) strawberry Jell-O
  • 1 cup chopped strawberries
  • 2 cups heavy cream
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan and bake for 10 minutes. Let cool.
  3. Beat cream cheese and sugar until smooth; mix in sour cream and vanilla. Add eggs one at a time, mixing well after each addition. Pour over cooled crust and bake for 45–50 minutes until slightly wobbly. Cool completely, then refrigerate for at least 4 hours.
  4. Prepare the strawberry layer by dissolving Jell-O in boiling water, then chilling until slightly thickened. Fold in whipped topping and strawberries; spread over the cheesecake layer and chill for an additional 2–3 hours.
  5. Whip heavy cream with powdered sugar until stiff peaks form; spread over the strawberry layer.
