  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 cup fresh strawberries, sliced
  • ½ cup strawberry jam or preserves
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In one bowl, whisk flour, sugar, cocoa powder, baking soda, and salt. In another bowl, mix buttermilk, oil, egg, vanilla extract, vinegar, and food coloring. Combine wet and dry ingredients until smooth.
  3. Pour batter into prepared pan and bake for 20-22 minutes until a toothpick comes out clean. Let cool.
  4. Lower oven temperature to 325°F (163°C). Beat cream cheese and sugar until smooth. Add eggs one at a time followed by vanilla extract and sour cream. Pour over cooled cake base.
  5. Bake for 45-50 minutes until edges are set; center should be slightly jiggly. Cool in the oven with the door ajar for an hour before refrigerating for at least four hours or overnight.
  6. For topping: heat jam and lemon juice in a saucepan until smooth; let cool. Arrange fresh strawberries on top of cheesecake and drizzle with glaze before serving.
