  • 1/2 cup brown sugar
  • 2/3 cup all-purpose flour
  • 1/3 cup melted salted butter
  • 1 tsp cinnamon
  • 3 tsp cornstarch
  • 1/4 cup water
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine oats, brown sugar, flour, cinnamon, and melted butter until crumbly. Press half into a greased 9×9 inch baking pan.
  3. Evenly distribute sliced peaches and strawberries over the crust.
  4. In a saucepan over medium heat, mix brown sugar, cornstarch, salt, and water; stir until thickened (about 2 minutes). Remove from heat and stir in vanilla.
  5. Pour syrup over the fruit layer.
  6. Sprinkle remaining crumb mixture on top.
  7. Bake for about 35 minutes until golden brown. For extra crispiness, broil for an additional 2-3 minutes.
