Ingredients

Scale
  • 1 cup warm milk (110°F / 45°C)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • ⅓ cup granulated sugar
  • ⅓ cup unsalted butter, melted
  • 2 large eggs, room temperature
  • 4 ½ cups all-purpose flour (plus more for kneading)
  • 1 teaspoon salt
  • 1 ½ cups strawberry preserves or jam
  • 1 cup diced fresh strawberries (optional, for extra fruitiness)
  • 2 teaspoons ground cinnamon
  • 2 tablespoons granulated sugar
  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • Pinch of salt

Instructions

  1. In a large bowl, combine warm milk and yeast. Let sit for 5 minutes until foamy.
  2. Whisk in sugar, melted butter, and eggs. Gradually add flour and salt, mixing until a soft dough forms.
  3. Knead the dough on a floured surface for 6–8 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover it, and let rise in a warm place for 1–1 ½ hours or until doubled in size.
  5. In a small bowl, stir together strawberry preserves, diced strawberries (if using), cinnamon, and sugar.
  6. Punch down the risen dough and roll it into a large rectangle (about 16×12 inches).
  7. Spread the strawberry filling evenly over the dough while leaving a small border around the edges.
  8. Starting from the long side, tightly roll the dough into a log.
  9. Slice into 12 even rolls and place them in a greased 9×13-inch baking dish.
  10. Cover and let rise again for 30–45 minutes until puffy.
  11. Preheat oven to 350°F (175°C).
  12. Bake rolls for 25–30 minutes or until golden brown.
  13. In a medium bowl, beat cream cheese and butter until smooth.
  14. Add powdered sugar, lemon juice, lemon zest, and salt; mix until creamy.
  15. Spread glaze over warm rolls before serving.
