  • 1 lb ground beef (85% lean)
  • 1 lb baby bok choy, washed and halved lengthwise
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, chopped
  • 2 tbsp vegetable oil, divided
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp cornstarch dissolved in 1 tbsp water
  • Salt and black pepper to taste

Instructions

  1. Whisk together soy sauce, sugar, sesame oil, and cornstarch slurry in a small bowl. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add ground beef, break it apart with a spatula, and cook until browned (about 5-6 minutes). Remove and set aside.
  3. In the same pan, add remaining oil and sauté minced garlic and grated ginger for about 30 seconds until fragrant.
  4. Add bok choy cut-side down and sear for about 2 minutes until tender-crisp. Add a splash of water, cover, and steam for 1 minute.
  5. Return beef to the pan and pour sauce mixture over everything. Toss continuously for 1-2 minutes until the sauce thickens and coats the stir-fry.
  6. Serve garnished with chopped green onions.
