  • 2 cups gluten-free or all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp kosher salt
  • 1 tsp ground cinnamon
  • 8 tbsp butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed ripe bananas (about 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk
  • For the Toffee Sauce: 8 tbsp butter, ¾ cup brown sugar, ¾ cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish with nonstick spray.
  2. In a large bowl, cream butter with granulated and brown sugars until light. Mix in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually combine wet and dry ingredients until just mixed; do not overmix.
  5. Pour batter into the baking dish and bake for 45-55 minutes until a toothpick comes out clean.
  6. While baking, melt butter with brown sugar in a pot over medium-low heat for the toffee sauce. Stir in heavy cream and simmer for five minutes.
  7. Once the cake is baked and slightly cooled, poke holes on top and pour the cooled sauce evenly over it. Let it soak for at least one hour before serving.
