  • 1 ½ lbs skirt steak
  • 1 lb purple cabbage, cored and thinly sliced
  • 1 large red pepper, halved and seeded
  • 1 large poblano pepper, halved and seeded
  • 1 red onion, cored and cut into ½” wedges
  • olive oil
  • 12 tortillas, charred over an open flame
  • ½ cup freshly squeezed orange juice
  • 2 tsp orange zest
  • 1 (7oz) can chipotle peppers in adobo sauce
  • 2 tbsp honey
  • ¾ cup neutral oil (such as safflower)
  • 4 green onions, thinly sliced

Instructions

  1. Preheat your oven to 425°F for roasting the vegetables.
  2. On a baking sheet, place halved peppers and onion wedges; drizzle with olive oil. Roast for 35-40 minutes until tender.
  3. Toss sliced cabbage with olive oil and salt on another sheet; roast for about 25-30 minutes until caramelized.
  4. Pat the skirt steak dry and season generously with salt; let sit at room temperature for 30 minutes.
  5. In a food processor, blend orange juice, zest, chipotle peppers, honey, and gradually add oil until smooth.
  6. Cook the steak in a cast iron skillet over medium-high heat for 3-5 minutes per side until cooked to your preference; rest for 5 minutes before slicing.
  7. Assemble tacos by layering roasted cabbage slaw, steak slices, and drizzle with chipotle sauce.
