  • 1 lb flank steak
  • 2 ears sweet corn
  • 1 large red bell pepper
  • 8 oz fusilli pasta
  • 1 cup halved grape tomatoes
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • Crumbled cotija cheese (optional)
  • Salt and black pepper

Instructions

  1. Preheat the grill or stovetop grill pan over medium-high heat.
  2. Season the flank steak generously with salt and pepper. Grill for about 6 minutes on each side until desired doneness is reached.
  3. Allow the steak to rest before cutting it into small cubes.
  4. Grill sweet corn and red bell pepper pieces until char marks appear, then set aside to cool.
  5. Cook fusilli pasta according to package instructions; drain and rinse under cold water.
  6. In a large bowl, combine cubed steak, grilled vegetables, halved grape tomatoes, diced cucumber, diced onion, and crumbled cheese.
  7. Toss with cilantro lime vinaigrette until well-coated. Garnish with fresh cilantro if desired.
