  • 6 oz cream cheese (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. For the cream cheese filling, beat softened cream cheese, sugar, and vanilla until smooth. Transfer it to a piping bag and refrigerate.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  4. In another bowl, combine pumpkin puree, egg, melted butter, and vanilla until smooth.
  5. Gently stir wet ingredients into dry ingredients until just combined; do not over-mix.
  6. Fill muffin cups halfway with batter; pipe cream cheese filling into each center.
  7. Optionally sprinkle pumpkin seeds on top before baking.
  8. Bake for 18–22 minutes or until golden brown.
