  • 2 chicken sausage links (casing removed)
  • 3/4 cup yellow onion (diced)
  • 1/2 cup carrot (sliced)
  • 1/4 cup celery (sliced)
  • 2 tsp smoked paprika
  • 2 garlic cloves (minced)
  • 1 lb. yukon gold or red potatoes (diced)
  • 2 cups kale (stems removed)
  • 32 oz. chicken broth
  • 1 cup water
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken sausage and cook until browned (about 5 minutes). Remove sausage using a slotted spoon.
  2. In the same pot, add diced onion, sliced carrot, sliced celery, minced garlic, and smoked paprika. Sauté for 2-3 minutes.
  3. Stir in diced potatoes and kale; combine well. Pour in chicken broth and water.
  4. Bring to a boil; reduce heat to simmer and cover. Cook until potatoes are tender (about 15 minutes). Return cooked sausage to pot and mix well.
  5. Season with salt and pepper to taste; garnish with fresh parsley before serving.
