  • 2 tbsp gochujang
  • 1 tbsp gochugaru (or ½ teaspoon of chili flakes)
  • 1/2 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1/2 tbsp sugar
  • 1/2 tsp toasted sesame oil
  • 1/2 cup water
  • 2 tbsp neutral oil (divided)
  • 2 packs enoki mushrooms
  • 1 clove garlic (minced)

Instructions

  1. Prepare the sauce by mixing gochujang, gochugaru, soy sauce, rice vinegar, sugar, sesame oil, and water in a small bowl until well combined.
  2. Trim the roots of the enoki mushrooms and rinse them under water; pat dry.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook half the mushrooms until golden brown on both sides (1-2 minutes), then remove to a plate and repeat with remaining mushrooms.
  4. In the same skillet, add another tablespoon of oil and sauté minced garlic for 30 seconds.
  5. Pour in the sauce mixture and bring to a simmer.
  6. Return all cooked mushrooms to the skillet and cook uncovered for 3-4 minutes until evenly coated.
