  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 lb carrots, peeled and chopped
  • 1 large sweet potato, peeled and diced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground cumin
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp cayenne pepper (optional)
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until fragrant.
  2. Add chopped carrots and diced sweet potato to the pot; cook for about 5 minutes until slightly softened.
  3. Stir in ground cumin, cinnamon, ginger, and cayenne pepper to coat the vegetables in spices.
  4. Pour in vegetable broth, bring to a boil then reduce heat to simmer for 20–25 minutes until vegetables are tender.
  5. Blend the soup until smooth using an immersion blender or regular blender.
  6. Stir in coconut milk; season with salt and pepper. Reheat gently before serving.
