  • 1 1/2 cup dry short grain sushi rice
  • 2 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 can (12 oz) Spam (or use chicken/beef/turkey)
  • 2 1/2 teaspoons soy sauce
  • 2 tablespoons sugar (for caramelizing)
  • 1/4 cup water (for sauce)
  • 6 eggs
  • 3 sheets roasted seaweed nori (cut into strips)

Instructions

  1. Rinse the sushi rice until water runs clear; drain well.
  2. Cook the rinsed rice with water in a rice cooker or stovetop pot.
  3. In a bowl, mix rice vinegar, sugar, and salt until dissolved; drizzle over cooked rice and fold gently.
  4. Slice Spam into thick pieces and cook in a skillet until crispy.
  5. Combine soy sauce, water, and sugar; pour over spam slices until caramelized.
  6. Whisk eggs and cook them in a skillet to form an omelet. Roll and cut to size.
  7. Assemble by layering rice, egg, and spam on nori; wrap tightly.
