  • 15.25 ounces corn (undrained)
  • 14.5 ounces diced tomatoes (undrained)
  • 4 ounces diced green chilies (undrained)
  • 1/2 cup diced onion
  • 14.5 ounces chicken broth
  • 1 ounce dry ranch seasoning
  • 1 1/2 teaspoon cumin
  • 1 tablespoon chili powder
  • 2 boneless, skinless chicken breasts (about 23 cups)
  • 8 ounces cream cheese (room temperature)

Instructions

  1. Prepare your ingredients: drain and rinse the black beans, dice the onion finely, and cut chicken into bite-sized pieces if desired.
  2. In a slow cooker, combine black beans, corn, diced tomatoes, green chilies, and diced onion. Pour in chicken broth and add ranch seasoning, cumin, and chili powder.
  3. Place chicken breasts on top of the mixture and break apart cream cheese into chunks over the chicken.
  4. Cover and cook on low for about 4 hours or until the chicken is cooked through.
  5. Remove chicken breasts, shred them using two forks, then return shredded chicken to the soup and stir well before serving.
