  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup semi-sweet chocolate chips (plus more for topping, optional)
  • 1/2 cup chopped nuts or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, melted butter or coconut oil, brown sugar, granulated sugar, and vanilla extract until smooth.
  3. Add flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves; mix gently until combined.
  4. Fold in rolled oats and chocolate chips evenly into the dough.
  5. Drop rounded tablespoons onto a lined baking sheet about 2 inches apart; top with extra chocolate if desired.
  6. Bake for around 10 minutes until edges are lightly golden; centers should appear slightly underbaked.
  7. Let cool on the baking sheet for a few minutes before transferring to wire racks.
