  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 8 oz mushrooms (baby bella or white mushrooms), sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Instructions

  1. Pat the beef chops dry and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil and unsalted butter in a skillet over medium-high heat; sear the beef chops for 3-4 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, add more butter; sauté sliced onions and mushrooms until softened. Add minced garlic and cook until fragrant.
  4. Sprinkle flour over the mixture, stir well, and gradually whisk in beef broth followed by heavy cream. Season with thyme, salt, and pepper; simmer until thickened.
  5. Return the beef chops to the skillet; cover and cook on low heat until cooked through (internal temperature reaches 145°F). Let rest before serving.
