  • 2 pounds lean ground beef
  • 2 eggs
  • 22 saltine crackers, crushed (about 1 cup)
  • 1/3 cup dry minced onion
  • 1/3 cup milk
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ginger powder
  • 1/4 teaspoon pepper
  • 1 10 oz. jar seedless blackberry preserves (1 cup)
  • 1/2 cup hoisin sauce
  • 3 tablespoons Gochujang
  • 1/4 cup red apple vinegar
  • 2 tablespoons low sodium soy sauce
  • 1 1/2 tablespoons cornstarch
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 450°F and line a baking sheet with foil.
  2. In a mixing bowl, whisk eggs then add all meatball ingredients. Mix well and form into meatballs; place on the baking sheet.
  3. Bake for about 8 minutes until lightly browned.
  4. In another bowl, combine all sauce ingredients and whisk until smooth.
  5. Layer some sauce in the slow cooker, add meatballs, drizzle more sauce over them, and repeat layering.
  6. Cook on low for 2 hours. Stir gently halfway through cooking.
