- 3 carrots, chopped
- 2 celery stalks, chopped
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 4 cups beef broth
- 3/4 cup small pasta (like ditalini)
- Salt and pepper to taste
- Brown the ground beef in a skillet over medium-high heat and drain excess fat. Transfer to the slow cooker.
- Add chopped carrots, celery, onion, and minced garlic to the slow cooker; stir well.
- Pour in diced tomatoes with juices, tomato paste, beef broth, and seasonings; mix thoroughly.

- About 30 minutes before serving, stir in the small pasta; cover and cook until tender.
