  • 1 ½ teaspoons smoked paprika
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 2 pounds baby red potatoes, halved
  • ¼ cup white apple vinegar
  • ¼ cup chicken stock
  • 2 shallots, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 3 cups broccoli florets
  • ½ cup heavy cream
  • 1 ½ tablespoons freshly squeezed lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Season chicken thighs with smoked paprika, salt, and pepper.
  2. Sear in a cast iron skillet until golden brown, then set aside.
  3. In the slow cooker, combine halved baby red potatoes, white apple vinegar, chicken stock, chopped shallots, minced garlic, and dried thyme. Stir well.
  4. Lay seared chicken thighs over the potato mixture.
  5. Slow cook on low for 5 to 6 hours until chicken reaches an internal temperature of 165°F.
  6. Add broccoli florets 30 minutes before cooking ends.
  7. Remove from slow cooker and keep warm.
  8. Whisk together heavy cream, lemon juice, and cornstarch; pour into the slow cooker to thicken for an additional 10 to 15 minutes on high heat.
