  • 1 1/2 pounds chicken thighs, cut into 1-inch pieces
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cloves garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 large potatoes, cut into ½-inch cubes
  • 3 cups chicken broth
  • 1 cup green peas, frozen
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. Dice the chicken into pieces and season with salt and pepper.
  2. In a skillet, heat olive oil over medium heat. Sear the chicken until browned (about 4-5 minutes).
  3. Transfer seared chicken to the slow cooker. Add flour, thyme, rosemary, and salt; stir to coat.
  4. Add garlic, onion, carrots, potatoes, and chicken broth to the slow cooker. Stir well.
  5. Cover and cook on low for 7–8 hours or high for 3–4 hours until tender.
  6. Add frozen peas and milk; stir gently and cook an additional 10–15 minutes.
  7. Adjust seasoning to taste before serving hot.
