  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 lbs ground beef
  • ¾ cup Italian-style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • Marinara sauce
  • Cooked pasta or zucchini noodles, if desired

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté chopped onion and red bell pepper in olive oil until translucent; add minced garlic and let cool.
  3. In a bowl, combine ground beef, breadcrumbs, parmesan, eggs, tomato paste, parsley, salt, black pepper, and cooled vegetables. Mix well.
  4. On parchment paper, shape the mixture into an 8"x15" rectangle. Layer with fresh basil and shredded mozzarella.
  5. Roll up the meatloaf tightly using parchment paper as a guide. Seal the edges.
  6. Bake on a lined baking sheet for about one hour; let rest before slicing.
  7. Serve over pasta or zucchini noodles topped with marinara sauce.
