  • 1/2 cup panko breadcrumbs
  • 1/4 cup mayonnaise
  • 1 egg
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon zest
  • 1/2 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for frying)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garlic (minced)

Instructions

  1. In a mixing bowl, combine chopped shrimp, panko breadcrumbs, mayonnaise, egg, parsley, Dijon mustard, lemon zest, Old Bay seasoning, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small patties about 2 inches wide and place them on a parchment-lined plate.
  3. Heat olive oil in a frying pan over medium heat until shimmering but not smoking.
  4. Carefully fry each shrimp cake for about 4-5 minutes on each side until golden brown and crispy. Remove from the pan and drain on paper towels.
  5. For the lemon aioli, mix together mayonnaise, fresh lemon juice, lemon zest, minced garlic, salt, and pepper in another bowl until smooth.
