  • 1 tsp butter or olive oil
  • 1/4 cup shredded cheese (mozzarella, cheddar, or parmesan)
  • 1/2 cup broccoli florets
  • 1/4 cup sliced mushrooms
  • 1/4 cup diced sweet potato
  • 1 green chili or jalapeño, sliced
  • 1/2 avocado

Instructions

  1. In a non-stick skillet, heat olive oil over medium-high heat. Add sweet potatoes and cook for about 3-4 minutes until softened.
  2. Stir in broccoli, mushrooms, and green chili; sauté for another 4-5 minutes until tender. Season with salt and pepper.
  3. In a mixing bowl, whisk together the eggs, milk (if using), salt, and pepper until well combined.
  4. In another pan, melt butter or olive oil over low-medium heat. Pour in the egg mixture and gently stir until soft and creamy. Add cheese on top before removing from heat.
  5. Slice the avocado and season lightly with salt. Serve the scrambled eggs alongside the sautéed veggies and sliced avocado.
