  • 23 dried ancho chilies
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 tablespoon chili powder

Instructions

  1. Prepare the Chilies: Remove stems and seeds from guajillo and ancho chilies. Toast them in a dry pan over low heat until fragrant.
  2. Make the Marinade: Blend toasted chilies with garlic, onion, cumin, oregano, chili powder, and beef broth until smooth.
  3. Marinate the Meat: Place beef chuck roast in the crockpot and pour marinade over it. Season with salt and pepper.
  4. Cook: Cover and set crockpot to low for 8-10 hours or high for 4-6 hours until meat is tender.
  5. Shred the Meat: Remove beef from the crockpot and shred with two forks; return to sauce to absorb flavors.
  6. Serve: Ladle birria into bowls with garnishes like cilantro and lime wedges.
