  • 1 lb ground beef (or ground turkey/chicken)
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tbsp sesame oil or olive oil
  • Salt & pepper to taste
  • 1 cup broccoli florets
  • 1 cup zucchini, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, chopped
  • 1 cup sliced mushrooms
  • 1 tsp minced garlic

Instructions

  1. Cook rice according to package instructions and set aside.
  2. In a skillet over medium heat, add sesame oil and brown the ground beef. Stir in soy sauce, garlic powder, salt, and pepper until well combined.
  3. In another pan, heat olive oil over medium-high heat. Add minced garlic and chopped vegetables; stir-fry for 5-7 minutes until tender-crisp. Toss with remaining soy sauce.
  4. Assemble by layering rice in bowls topped with ground beef and stir-fried veggies.
