  • 6 beef sausages
  • 1 large white onion
  • 2 medium carrots
  • 2 cloves of garlic
  • 480ml beef stock
  • 400g baby potatoes
  • 3 tbsp butter
  • 3 tbsp plain flour
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/4 tsp dried rosemary
  • 1/4 tsp dried thyme
  • 1/4 tsp black pepper
  • 1 beef oxo/bouillon cube
  • 1 tbsp butter (melted)
  • finely diced chives (to garnish)
  • Salt (as needed)

Instructions

  1. Fry diced turkey bacon in a large frying pan until crisp; set aside. Brown the beef sausages in the same pan.
  2. Sauté diced onions and carrots until soft; add minced garlic.
  3. Create a roux by melting butter and stirring in flour, then gradually whisk in beef stock, Worcestershire sauce, herbs, and seasonings.
  4. Combine with reserved meat and pour into a baking dish.
  5. Layer sliced baby potatoes on top, brush with melted butter, and bake covered for 30 minutes before uncovering and baking an additional 20 minutes until golden.
