  • 2 1/2 cups heavy whipping cream
  • 2/3 cup light brown sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • Flaky sea salt (for topping)
  • Pie crust (refrigerated or homemade)

Instructions

  1. Prepare the pie crust in an 8-inch or 9-inch pie pan and chill while preparing the filling.
  2. In a medium saucepan, combine heavy whipping cream, brown sugar, cornstarch, and salt. Heat over medium heat until boiling and slightly thickened.
  3. Remove from heat and temper the egg yolks by whisking in a small amount of the hot mixture gradually.
  4. Pour the tempered egg mixture back into the saucepan along with honey and vanilla extract; mix well.
  5. Pour the custard into the chilled pie crust.
  6. Preheat oven to 375°F (190°C) and bake for 40-45 minutes until set but still slightly jiggly.
  7. Cool at room temperature before refrigerating until fully chilled.
  8. Before serving, sprinkle with flaky sea salt.
