  • 1 pound fresh salmon fillet
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice

Instructions

  1. Boil a large pot of salted water and cook pasta until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Season salmon with salt and pepper, then cook for 4-5 minutes on each side until fully cooked. Flake the salmon into pieces.
  3. In the same skillet, sauté garlic until fragrant (about 30 seconds), then add spinach and cook until wilted (2-3 minutes).
