  • 2 pounds beef flank steak (or skirt/roast)
  • ¼ cup vegetable oil
  • 1 large onion (sliced)
  • 45 cloves garlic (minced)
  • 2 bell peppers (sliced)
  • 2 tomatoes (sliced)
  • 1 can (8 ounces) tomato sauce
  • 12 cups beef broth
  • Salt and pepper to taste
  • Cumin
  • Smoked paprika
  • Sazon

Instructions

  1. Trim excess fat from the beef and season with salt, pepper, cumin, and Sazon.
  2. Heat 2 tablespoons of oil in a skillet over medium heat and sear the beef until browned on both sides.
  3. In the same skillet, add remaining oil and sauté onions, garlic, bell peppers, tomatoes, tomato sauce, thyme, paprika, cumin. Cook until softened.
  4. Pour in broth and transfer three-quarters of the mixture to your slow cooker.
  5. Place the seared beef in the slow cooker and cook on high for 3½ – 4 hours or low for 7 – 8 hours until tender.
  6. Shred cooked beef with two forks and mix it back into the sauce before serving.
