  • 12 oz pitted Medjool dates
  • 4 oz goat cheese, room temperature
  • 1/3 cup finely chopped walnuts
  • 2 teaspoons minced fresh rosemary
  • Zest and juice of 1 orange
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 3 tablespoons olive oil
  • Hot honey for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice each Medjool date lengthwise to create an opening and fill each with 1-2 teaspoons of goat cheese.
  3. In a mixing bowl, combine chopped walnuts, minced rosemary, orange zest and juice, cinnamon, sea salt, and olive oil.
  4. Arrange the stuffed dates in a baking pan and top each with the walnut mixture.
  5. Bake for about 15 minutes until warm. Let them rest for 5 minutes before serving, drizzled with hot honey.
