  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast without slicing all the way through.
  3. Sauté garlic in olive oil; add spinach until wilted. Remove from heat.
  4. In a bowl, mix roasted red peppers, mozzarella cheese, sautéed spinach, oregano, basil, salt, and pepper.
  5. Stuff each chicken breast with the mixture and secure openings with toothpicks or twine.
  6. Sear stuffed chicken in a skillet until golden brown on both sides.
  7. Transfer to a baking dish and bake for 20-25 minutes until cooked through (internal temperature should reach 165°F / 74°C).
