  • 1/2 cup raspberry jam or preserves
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 package (7 ounces) ladyfinger cookies
  • 8 ounces mascarpone cheese, softened
  • 1 cup heavy cream, cold
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • White chocolate shavings (optional)

Instructions

  1. In a small saucepan, heat 1/2 cup raspberry jam with 1/4 cup water and 1 tablespoon lemon juice until smooth. Let cool.
  2. Dip ladyfingers briefly in the raspberry mixture and layer them in an 8×8-inch dish.
  3. Beat 8 ounces softened mascarpone until smooth. In another bowl, whip 1 cup cold heavy cream with 1/3 cup powdered sugar and 1 teaspoon vanilla extract until stiff peaks form. Gently fold whipped cream into mascarpone.
  4. Spread half of the mascarpone mixture over ladyfingers, then top with half of the fresh raspberries.
  5. Repeat layers with remaining ingredients.
  6. Cover and refrigerate for at least 4 hours or overnight before serving.
