  • 1/2 cup water
  • 1 clove garlic, minced
  • 1/2 tsp sea salt
  • 1/2 tsp sugar (optional)
  • 1/4 tsp dried oregano
  • 1/2 cup shredded carrots
  • 1/2 cup shredded radish
  • 1/3 English cucumber (cut into matchsticks)
  • 1/2 red onion (thinly sliced)
  • 1 TBSP chopped green onion

Instructions

  2. Slice the vegetables into matchsticks or shreds for even pickling.
  3. In a medium saucepan, combine vinegar and water; bring to a boil. Add garlic, green onion, salt, oregano, and optional sugar; stir until dissolved. Let cool for 5–10 minutes.
  4. Place the sliced vegetables in the jar and pour the cooled brine over them, ensuring all veggies are submerged.
  5. Allow cooling at room temperature, then refrigerate. Your quick fridge pickles will be ready in just a few hours!
