  • 8 oz mascarpone cheese or cream cheese
  • 1 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1.5 tsp pumpkin pie spice
  • 24 ladyfinger cookies
  • 3/4 cup cooled strong brewed coffee

Instructions

  1. In a mixing bowl, blend pumpkin puree, mascarpone cheese, sugar, vanilla extract, and pumpkin pie spice until smooth.
  2. In a separate bowl, whip heavy cream to soft peaks and gently fold into the pumpkin mixture.
  3. Dip ladyfinger cookies in cooled coffee briefly and layer half at the bottom of your serving dish.
  4. Spread half of the pumpkin filling over the ladyfingers. Repeat layers with remaining ingredients.
  5. Cover and refrigerate for at least 6 hours or overnight before serving.
