Instructions

  2. In another bowl, whisk together pumpkin puree, milk, egg, and vegetable oil until smooth.
  3. Pour wet ingredients into dry ingredients and stir gently until just combined.
  4. Preheat a lightly greased griddle or frying pan over medium heat.
  5. Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
