  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a mixing bowl, combine graham cracker crumbs and sugar. Add melted butter and mix until combined.
  3. Press the mixture into the bottom of the prepared baking pan.
  4. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing well.
  5. Add eggs one at a time, then stir in pumpkin puree, vanilla extract, pumpkin pie spice until smooth.
  6. Pour the filling over the crust and bake for about 40 minutes until set but slightly jiggly in the center.
  7. Let cool at room temperature before refrigerating for at least four hours before cutting into squares.
