  • 1 cup pumpkin puree

  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 tablespoon vanilla extract
  • 1 tablespoon cinnamon or pumpkin pie spice

Instructions

  1. Preheat oven to 350°F.
  2. In a saucepan over medium heat, melt sugar until golden brown; pour into a prepared 9-inch cake pan.
  3. Blend cream cheese, pumpkin puree, eggs, sweetened condensed milk, evaporated milk, vanilla extract, and cinnamon until smooth.
  4. Pour the mixture over the caramel in the cake pan.
  5. Set the cake pan in a larger baking dish filled halfway with water.
  6. Bake for about 50 minutes until set around the edges; let cool in the water bath for an hour before refrigerating.
  7. Chill for at least two hours before serving.
