  • 1 cup finely chopped walnuts
  • 1 cup almond flour
  • 1/2 cup white sugar
  • 1/4 cup melted salted butter
  • 6 oz pure pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 2 packages (8 oz each) cream cheese, room temperature
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T softened salted butter
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine walnuts, almond flour, and sugar. Add melted butter and mix until combined. Press into the bottom of the prepared dish.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Reserve 1½ cups of this mixture.
  4. Mix pumpkin puree and pumpkin spice into the remaining cream cheese mixture.
  5. Pour the reserved plain cheesecake mixture over the walnut crust, followed by the pumpkin layer without mixing them together.
  6. For the streusel topping, combine oats, flour, sugars, cinnamon, softened butter, and vanilla until crumbly. Sprinkle on top of the pumpkin layer.
  7. Bake for 60-70 minutes or until set in the center. Cool slightly before refrigerating for at least two hours before cutting.
