  • 4 egg yolks
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • 2 cups heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 1 pound green marzipan
  • 1 pink marzipan rose (optional, for decoration)
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Beat eggs and sugar until pale and fluffy. Sift in flour, cornstarch, baking powder, and salt; gently fold until combined.
  3. Pour into the prepared pan and bake for 25–30 minutes until a toothpick comes out clean. Cool completely.
  4. For pastry cream, heat milk until simmering. Whisk egg yolks with sugar and cornstarch; gradually mix in hot milk. Return to heat until thickened, then chill.
  5. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  6. Slice cooled sponge into three layers; spread raspberry jam on the bottom layer, followed by pastry cream. Add the second layer topped with whipped cream, then finish with the final sponge layer.
  7. Decorate with remaining whipped cream and roll out marzipan to cover the cake smoothly.
