  • 4 large ripe plantains
  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon seasoning
  • 1 onion, minced
  • 3 garlic cloves, minced
  • 1 green bell pepper, minced
  • ¼ cup fresh cilantro, chopped
  • ⅓ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs, beaten
  • Coconut oil for frying

Instructions

  1. Preheat oven to 356°F (180°C).
  2. Grease a casserole dish and set aside.
  3. In a bowl, season ground beef with adobo and sazon; mix well.
  4. Sauté onion, garlic, bell pepper, and cilantro in coconut oil until soft.
  5. Add seasoned beef to skillet; cook until browned.
  6. Stir in tomato sauce and olives/capers; simmer for 5-10 minutes.
  7. Slice plantains into strips and fry in coconut oil until golden brown.
  8. Layer a portion of fried plantains at the bottom of the casserole dish.
  9. Brush with beaten egg mixture; add a layer of beef and sprinkle with cheese.
  10. Repeat layers until all ingredients are used, finishing with plantains and cheese on top.
  11. Bake for about 20 minutes until golden brown.
