  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Red pepper flakes (to taste)
  • 2 bay leaves (optional)
  • 2 cups vegetable broth
  • 2 (14 oz) cans pinto beans (drained and rinsed)
  • Salt and pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium-high heat; sauté diced onion until translucent (4–5 minutes).
  2. Stir in fire-roasted tomatoes, minced garlic, diced carrots, potato, and spices; cook an additional 1–2 minutes.
  3. Add vegetable broth and bay leaves; bring to a boil then reduce heat and simmer (10–15 minutes).
  4. Incorporate rinsed pinto beans; cook until vegetables are tender (about 10 more minutes).
  5. Blend half the soup for creaminess, then return blended portion back to the pot.
  6. Adjust seasoning as needed and serve hot.
