4 boneless, skinless chicken breasts
4 cloves fresh garlic, minced
2 tsp cumin powder
1 tsp smoked paprika
Juice of 2 limes
2 tbsp olive oil (plus more for cooking)
1 cup long-grain rice
1 cup low-sodium chicken broth
1 cup fresh cilantro leaves
2 green chili peppers, seeds removed
Instructions
In a mixing bowl, combine minced garlic, cumin powder, smoked paprika, lime juice, and olive oil. Coat the chicken breasts thoroughly in this marinade. Cover and let marinate for at least 30 minutes to infuse flavors.
Heat olive oil in a skillet over medium-high heat. Add the marinated chicken breasts to the skillet. Sear until golden brown on both sides (about 6–7 minutes per side). Use a meat thermometer to ensure that the chicken reaches an internal temperature of 165°F.
Rinse the long-grain rice under cold water until it runs clear. In a saucepan, combine rinsed rice with low-sodium chicken broth. Bring to a boil; then reduce heat to a simmer. Cover and cook until rice is tender and liquid is absorbed.
In your blender or food processor, combine fresh cilantro leaves, green chili peppers, lime juice from one lime, and olive oil. Blend until smooth. Adjust seasoning as needed.
