  • 1 lb. Red Kidney Beans (soaked overnight or 1 can)
  • 1 lb. Cannellini Beans (soaked overnight or 1 can)
  • 3 Carrots (sliced)
  • 3 Celery stalks (diced)
  • 1 Onion (diced)
  • 46 Garlic cloves (minced)
  • 1 qt. Tomato Juice
  • 1 can Diced Tomatoes
  • 8 cups Chicken Stock
  • 1 lb. Ditalini Pasta
  • Salt
  • Pepper
  • Thyme
  • Basil
  • Oregano

Instructions

  1. Heat a heavy pot over medium-high heat.
  2. Sauté kielbasa in oil until browned; add onions and cook until translucent.
  3. Stir in carrots and celery; cook until tender.
  4. Add garlic and seasonings; cook until fragrant.
  5. Pour in tomato juice, diced tomatoes, and chicken stock; bring to a boil.
  6. Add soaked beans; lower heat and simmer for 45-60 minutes until tender.
  7. Finally, add ditalini pasta; cook for an additional 10-12 minutes until al dente.
