  • 2 ripe pears (Bosc or Anjou), peeled, cored, sliced
  • 1 cup ground almonds (almond flour)
  • 1/2 cup plain flour
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs, room temperature
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup sliced almonds (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch round cake tin with baking paper.
  2. Cream together unsalted butter and sugar in a mixing bowl until pale and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Combine ground almonds, plain flour, and baking powder in another bowl; fold into the wet mixture until just incorporated.
  5. Gently fold in sliced pears, reserving some for decoration.
  6. Pour batter into the prepared tin, arrange reserved pear slices on top, sprinkle with sliced almonds, then bake for 45–55 minutes or until a toothpick comes out clean.
  7. Let cool for about 10 minutes before transferring to a wire rack.
