  • 2 cups + 2 Tbsp all-purpose flour
  • 1/3 cup brown sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg
  • 1/4 cup heavy whipping cream (plus more for brushing)
  • 1/4 cup sour cream
  • 2 tsp vanilla extract
  • 1/2 cup fresh peaches, diced
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • enough heavy whipping cream for consistency

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, brown sugar, baking powder, and salt.
  3. Cut in cold butter using a pastry cutter until the mixture resembles coarse crumbs.
  4. In another bowl, whisk together egg, heavy cream, sour cream, and vanilla extract.
  5. Gently fold the wet mixture into the dry ingredients and add diced peaches.
  6. On a floured surface, shape the dough into a circle about ¾ inch thick; cut into eight wedges.
  7. Place on the prepared baking sheet and brush tops with additional heavy cream.
  8. Bake for about 16 minutes or until golden brown.
  9. While baking, mix powdered sugar with vanilla extract and enough heavy cream for desired glaze consistency.
