  • 1 kg potatoes, scrubbed and boiled, peeled and diced
  • 1 large red onion, thinly sliced
  • 1 small bunch fresh parsley, finely chopped (about 1 cup packed)
  • 1/2 bunch fresh mint, finely chopped (about 1/4 cup packed)
  • 4 green onions, sliced
  • 5 tablespoons extra virgin olive oil
  • Juice of 2 lemons (about 3 tablespoons)
  • 1 1/2 teaspoons fine salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon sumac

Instructions

  1. Boil the potatoes in salted water until tender (12-15 minutes). Drain and let cool.
  2. Once cooled, peel if desired and dice the potatoes into cubes.
  3. Slice the red onion and green onions, and chop the parsley and mint finely.
  4. In a large mixing bowl, combine the diced potatoes with herbs and onions.
  5. Drizzle with olive oil and lemon juice; add salt, pepper, and sumac.
  6. Toss gently to combine without breaking the potatoes.
  7. Let it rest for 15–30 minutes before serving for optimal flavor.
